Perspective Books
One of my favorite subjects. Unfortunately, most of the books written about it are about as exciting to read as a geometry textbook. (Which is essentially what most of them are!)
Also, I've found even the good books to be incomplete in SOME capacity: covering everything well...except ONE KEY THING.
In any case, these are the best I've found so far.

My favorite book on the subject to recommend. It is as complete as any I've seen, but manages to be approachable at the same time. Very straightforward.

Okay...there are some errors in it. It's not perfect. BUT...I've found it does a good job of communicating some basic facts about drawing in perspective...especially if the student in question is intimidated by the subject to begin with. Not a DEEP book, but good for what it is.
